Ingredients:
- 400 g bratwurst, coarse, without casing
- 40 grams of butter
- 4 eggs

- 100 g ham, cooked
- 125g parmesan, grated
- 125 g mozzarella, sliced
- 1 tsp salt
- 1 tsp pepper
- 100 g bacon, diced

Preparation:
1. Switch on the oven to 180°C fan oven and prepare a casserole dish greased with butter.
2. Squeeze the sausage meat out of the skin and put it in a pan.
3. Briefly bring the cream cheese, broth and spices to the boil.
4. Beat the eggs in a bowl with the salt and pepper to beat, then place each half in a pan.
5. Fry the mixture into two omelettes one after the other.
6. Place one of the omelettes in the casserole dish and pour the sauce with the bratwurst over it.

Preparation:
1. Mix the eggs, water and cream cheese until everything is creamy.
2. Heat the pan on a low level and put part of the batter in the pan and fry small pancakes (fry the pancakes on both sides)

Cinnamon waffles

Ingredients:
- 6 eggs
- 1 egg white
- 4 tbsp coconut oil
- ½ tsp baking powder
- 40ml almond milk
- ½ vanilla bean
- Stevia, salt, cinnamon powder
Preparation:
1. Bring a pot of water to a boil, then boil 2 eggs for about 8 minutes.
2. Then peel the eggs and place them in a bowl.
3. To the bowl, add 2 more raw eggs, one egg white, stevia, cinnamon powder, salt, baking soda, and 2 tablespoons coconut oil.
4. Then puree everything until you get a creamy mass.
5. Now cut the vanilla pod lengthwise and remove the vanilla pulp from one half of the vanilla pod.
6. Then bring a small pot of water to a boil.
7. Now take a heatproof container that fits into the pot of boiling water and add the almond milk, 1 tablespoon coconut oil, the vanilla and the 2 yolks of the last 2 eggs.
8. Now put the heat-resistant container into the hot water and stir constantly with a whisk for 3 minutes until the mass thickens and you get a cream.
9. Brush the waffle iron with 1 tbsp coconut oil and bake waffles from the pureed egg mixture.
10. Now serve the waffles with the vanilla cream.
Omelette With Chanterelles

Ingredients:

- 200 grams of chanterelles
- ½ spring onion
- 3 eggs
- 75 g bacon cubes
- Salt and pepper
Preparation:
1. Clean the chanterelles. Cut off the stems and cut the mushrooms into small pieces.
2. Cut the spring onion into rings.
3. Place the bacon in a coated pan and sauté briefly. Add the chanterelles and onion and sauté briefly.
