Ingredients:

  • 3 eggs
  • 3 tbsp cream cheese
  • ¼ tsp baking powder

Preparation:

1. Separate the eggs. Mix the egg yolk with the cream cheese to a creamy mass. Using a hand mixer, beat the egg whites with the baking powder until stiff.

2. Carefully fold the beaten egg whites into the yolk mixture.

3. Spoon 5-7 portions of the batter onto a baking sheet, leaving plenty of space between the flatbreads. Sprinkle with salt, thyme, rosemary etc. to taste.

4. Then bake for about 15 minutes in a preheated oven at 150 degrees.

Brussels sprouts casserole

Ingredients:

  • 200 g medium-aged Gouda or mountain cheese
  • 250 g bacon strips
  • 200 g cream 35%
  • 800 grams of Brussels sprouts
  • Salt and pepper

Preparation:

1. Clean Brussels sprouts and cook until al dente, then drain and drain well

2. Grate the cheese. Cut the bacon into small pieces and mix with the cream.

3. Season with salt and pepper and possibly a little nutmeg, pour over the Brussels sprouts.

4. Bake at 175° for 25-30 minutes.

Waffle Pizza

Ingredients:

  • 10 eggs
  • 8 tablespoons grated Parmesan
  • 2 tbsp clarified butter
  • 8 tablespoons almond flour
  • 200 g grated cheese
  • 2 teaspoons of baking soda
  • 2 tbsp psyllium powder
  • Salt pepper
  • Optional: 2 tsp Italian seasoning, tomato sauce, sliced ham

Preparation:

1. Put all the ingredients except the tomato sauce and the cheese in a bowl and mix well with the mixer.

2. Now pour the batter onto the waffle iron as usual.

3. Spread the tomato sauce and cheese over the finished waffles or add slices of ham if you like.

4. Now bake the waffle pizza for 3 – 5 minutes in the oven at about 160 degrees until the cheese has melted.

Omelette wraps

Ingredients:

  • 4 handfuls of feta/goat cheese
  • 8 eggs
  • 4 tablespoons pesto
  • pinch of salt
  • spring onions
  • lettuce, sliced
  • Other ingredients as you like

Preparation:

1. Beat eggs and salt. Fry thin omelettes on both sides. Allow omelets to cool.

2. Spread the pesto over the cooled omelettes and top with the remaining ingredients. Roll into wraps.

Salad With Goat Cheese And Fruit

Preparation time: 15 minutes

Ingredients:

  • 120g goat cheese (goat cheese roll)
  • 10 cherry tomatoes
  • 80g mixed lettuce or lamb’s lettuce
  • 2 figs
  • 2 tbsp olive oil
  • 20g hazelnuts
  • 2 tbsp strawberry jam (with a high fruit content)
  • 2 tsp apple cider vinegar
  • Salt and pepper

Preparation:

1. Remove the goat cheese from the packaging and cut into strips about 2 cm thick.

2. Take a baking sheet and place parchment paper on it. Place the goat cheese slices on top and bake them at 230°C for about 4 minutes.

3. Wash the cherry tomatoes and figs thoroughly and quarter them.

4. Place the lettuce in a colander, wash and then drain.

5. Spread the salad on a plate and add the cherry tomatoes, hazelnuts, figs and goat cheese slices.

6. Now pour a tablespoon of olive oil and a teaspoon of apple cider vinegar over the salad per plate. Season it with pepper and salt.

7. Finally spread strawberry jam on the baked goat cheese. A total of one tablespoon per plate, otherwise it will be too sweet.

Smoked Salmon And Avocado

Ingredients:

  • 200g smoked salmon
  • 2 avocados
  • 150 g cream cheese, light
  • Herbs to taste
  • Salt pepper

Preparation:

1. Halve the avocado, remove the stone and scoop out the flesh with a spoon and place on a plate.

2. Season the cream cheese with herbs, salt and pepper.

3. Put the salmon and herb cream cheese on the plate with the avocado.

4. Sprinkle with freshly ground black pepper and a pinch of sea salt.

Feta avocado frittata

Portion: 2

Preparation time: 25 minutes

Ingredients:

  • 4 eggs
  • 100g feta
  • 1 avocado
  • 1 spring onion
  • ½ lemon
  • 50ml milk with 3.5% fat
  • 1 tsp olive oil
  • Salt and pepper

Preparation:

1. Wash the spring onions and then cut them into fine rings.

2. Then cut the avocado in half and remove the stone.

3. Then remove the skin from the flesh and cut it into small cubes.

4. Mix the avocado cubes with the lemon juice of half a lemon.

5. Mix the milk and eggs in a bowl and season with salt and pepper.

6. Heat the olive oil in a pan and briefly sauté the spring onions.

7. Then add the egg mixture and let the egg set for about 3 minutes.

8. Then spread the avocado cubes over the egg and crumble the feta over it.

9. Now cover the pan with a lid and let everything fry for 10 minutes on no flame.

10. Then you can serve the frittata.
