Crunchy protein bread

Ingredients:

  • 40 g pumpkin seeds, chopped
  • 40 g sunflower seeds
  • 20 grams of sesame seeds
  • 100 g sweet lupine flour
  • 100 g almonds, ground
  • 70 g coconut flour
  • 50 g linseed, ground
  • 30 g spelled wholemeal flour
  • 50 g oat bran
  • 2 teaspoons cream (use tartar baking powder)
  • 1 tsp salt
  • ¼ tsp coriander, ground
  • 2 eggs
  • 250 g low-fat quark

Preparation:

1. Mix in the sunflower, pumpkin seeds and sesame seeds. Remove

2 tbsp and set aside. Add sweet lupine flour, coconut flour, almonds, spelled flour, linseed baking powder, oat bran, coriander and salt to the remaining seeds and mix well.

2. Mix the egg with the curd. Alternately add 250 ml water (lukewarm) and the dry ingredients to the egg and quark mixture and process everything with a hand mixer and dough hook to form a bread dough.

3. Pour the finished dough into a loaf pan lined with baking paper and score lengthwise with a knife. Sprinkle with the remaining 2 tablespoons of seeds, cover and leave to rest for 30 minutes.

4. Fill an ovenproof dish with water and place it on the bottom of the oven to prevent the bread from drying out while baking. Now bake the bread at 200 °C (180 °C fan oven) for 10 minutes. Reduce the temperature by 20°C and bake for a further 45 minutes. Take the finished bread out of the oven, let it cool for 10 minutes, turn it out and wait until it has completely cooled down.

Orange fries

Ingredients:

  • 600 g Hokkaido pumpkin
  • 2 tbsp sesame oil
  • Salt
  • pepper
  • paprika powder
  • nutmeg

Preparation:

1. Wash the squash and cut into strips, similar to french fries.

2. Mix the oil with the spices.

3. Place the squash on a baking sheet lined with parchment paper and brush with the oil.

4. Then cook at 200°C for 20-30 minutes.

Strawberry Nut Keto Yogurt Dessert

Ingredients:

  • 100 g Greek yoghurt compacted
  • 10 grams of walnuts
  • 10g macadamia nuts
  • 10 grams of almonds
  • 4 grams of chia seeds
  • 2 g ground flaxseed
  • 1/2 tsp strawberry powder

Preparation:

1. Mix all the ingredients in a bowl and sprinkle with the strawberry powder. Enjoy your meal.

Yogurt With Nuts

Preparation time: 5 minutes

Ingredients:

  • 100 g Greek yoghurt
  • 10 grams of walnuts
  • 10 g macadamia nuts
  • 10 grams of almonds
  • 4 grams of chia seeds
  • 2 grams of flaxseed
  • ½ tsp strawberry powder

Preparation:

1. Mix the yoghurt with the nuts and seeds and pour into a dessert glass.

2. Scatter the strawberry powder on top and serve.

Keto buns

Portion: 8

Preparation time: 35 minutes

Ingredients:

  • 60 g coconut flour
  • 30 g psyllium husks
  • 1 teaspoon Baking powder
  • 20 g erythritol
  • ½ tsp salt
  • ½ tsp cinnamon
  • ½ tsp ground cloves
  • 200 grams of eggs
  • 250 ml boiling water

Preparation:

1. Place the dry ingredients in a food processor and mix together. Slowly add the boiling water while stirring.

2. Leave to swell for 1 minute and then add the eggs. Mix everything well again.

3. Form 8 rolls from the finished dough and place them on a baking tray lined with baking paper. Bake at 190°C for 20 minutes.

Chocolate ice cream

Portion: 8

Preparation time: 8 hours 10 minutes

Ingredients:

  • 120 ml coconut oil
  • 90 ml almond milk
  • 200 g egg
  • 80 grams of egg yolk
  • 30 grams of stevia
  • 20 g baking cocoa
  • 45 ml MCT oil

Preparation:

1. Put the almond milk in a saucepan and heat. Stir in stevia until completely dissolved. Add coconut oil and wait until it has dissolved. Pour into a blender jug.

2. Add the remaining ingredients and mix everything well.

3. Fill the finished mixture into ice cream molds and freeze for about 8 hours.

Fruit mite

Ingredients:

  • 200g mascarpone
  • 100 grams of cream cheese
  • 150 g raspberries, frozen
  • 3 teaspoons Stevia, powder
  • 10 ml lime juice

Preparation:

1. Put all the ingredients in a blender and blend well.

2. Enjoy cold or store in the fridge.
